I love baking crisps, especially during the fall. During the summer I often make peach crisp, but fall autumn means apples. With two apple trees in my front yard, I have plenty of apples come autumn. My mom also gave me a zucchini from her garden this year. I therefore decided to create a new variation of my traditional apple crisp. I have previously made an apple-squash crisp that my family loved. I therefore recently made an equally delicious apple-zucchini crisp with the fresh fruit and vegetable.
Ingredients
- 3 cups of diced unpeeled apples
- 2 cups of diced unpeeled seeded zucchini
- 1/2 cup of white sugar
- 2 tablespoons of cinnamon
- 1 teaspoon of salt
- 1 cup of oats
- 2 tablespoons of butter
- 1/2 cup of brown sugar
Directions
- Preheat the oven to 350°.
- Combine the diced apples, diced zucchini, white sugar, and 1 tablespoon of cinnamon in a large bowl.
- Stir to thoroughly coat the apples and zucchini in the sugar-cinnamon mixture.
- Pour the apple-zucchini mixture into a greased 9×9 baking pan.
- Combine the oats, 1 tablespoon of cinnamon, and salt in a medium bowl. Stir to combine.
- Spoon the oat mixture over the apple-zucchini mixture.
- Cut the butter into smaller pats and place evening on top of the oats.
- Bake the apple-zucchini crisp for 35 minutes.
- Sprinkle the top of the crisp with the brown sugar.
- Bake for another 15 minutes.
- Broil for 5 minutes at 550° for a crispy caramelized topping.
- Serve warm or chilled.
- Refrigerate any uneaten apple-zucchini crisp.
